Elderberry Syrup
This is going to be a slightly less detailed post than normal. After many requests I've decided to go ahead and share what I did to make elderberry syrup from fresh elderberries. Consider this a rough draft and more of a blueprint. I'm sure in the near future, I'll have a healthier, more descriptive finalized version. Until then, enjoy
2 cups elderberries (about 8oz)
1 c sugar or honey
1 c raw honey
1/4 cup water
Juice of 1 lemon
A couple slices of fresh ginger
1 cinnamon stick
1 clove
In a saucepan combine everything but the Honey. Summer on medium heat until the liquid coats the back of a spoon. Strain the liquid through a strainer and let cool to just warm (around 110°F) add honey and cool completely. It's important you don't destroy the benefits of the raw honey by adding when it's too warm. Store in a cool place and use a tablespoon at a time, as needed for colds, coughs, and whatever flu variant may be on the news 😉. It's also great mixed with seltzer water to make an elderberry soda.
